Kaivari Samba derives its name from the distinctive stripe-like markings on its grains, resembling the natural lines found on the human palm (Kai = palm, Vari = stripes). This traditional rice variety produces bold, coarse grains with a characteristic red hue.
Widely valued in South Indian cuisine, Kaivari Samba is ideal for preparing Idli, Dosa, Idiyappam, and Aval (flattened rice). The hand-pounded flattened rice made from this variety is especially renowned for its rich flavor, pleasant texture, and exceptional taste.
Nutritionally, Kaivari Samba is a valuable source of essential minerals, including calcium, magnesium, and potassium. It is particularly notable for its high iron content. Boiled Kaivari Samba contains approximately 5.80 mg of iron per 100 g, significantly higher than the 0.72 mg per 100 g reported for conventional parboiled rice in the Indian Food Composition Tables (IFCT), 2017. This makes Kaivari Samba a nutritious traditional grain that supports a balanced and wholesome diet.
